Safforn Chicken Recipe:

- 1/2 cup coconut oil
- 3 small cinnamon stick
- 5 cloves
- 4 green cardamoms
- 2 tbsp minced garlic
- 1 1/2 onions sliced
- 4/1 tsp nutmeg
- 1 tbsp minced ginger
- 1 tbsp garlic paste
- 1 Lb chicken
- Salt to taste
- 1/2 tsp red chilli powder
- 1 1/2 Safforn,crushed and soaked in 4 tbsp of hot water
Method:
- 1. Heat the oil in a pot and add the cinnamon,cloves and cardamoms. Fry until they crackle.
- Add the chopped garlic and fry until brown
- 2. Add the ginger and garlic paste, the chicken pieces,salt and red chili powder. Stir and cook
- until water evaporates and bring to a boil. Reduce heat,cover the pan and cook until chicken become tender.
- 3. Remove the pot from the heat and cool. Take out chicken pieces and strain the gravy, through a fine strainer.
- 4. Add the chicken pieces to the gravy. Simmer until the gravy is reduced to half and has a sauce-like consistency. Add the safforn. Stir and serve
